Eight Eight Gastronomy Ltd takes its name from the birth year of its founder, Chef Volae Williams 1988. For him, it marks the start of a lifelong love of food, creativity, and hospitality.
Chef Volae spent more than 19 years in Jamaica’s hospitality and airline catering industry, building a career defined by excellence, innovation, and memorable guest experiences. When Hurricane Melissa disrupted the tourism and hotel sector, he chose to see not an ending, but a new beginning.
With resilience and a deep commitment to his craft, he turned years of experience into a vision of his own. That vision became Eight Eight Gastronomy Ltd, a boutique culinary company focused on exceptional food experiences delivered with a personal touch.
What began as a personal milestone has grown into a brand built on passion, resilience, excellence, and the courage to create something extraordinary.
